INGREDIENTS


Lamb flap - bones removed

2 cups couscous

4 tbspn McCormacks Bush Spice

Salt

Pepper

Fresh rosemary

2 eggs

2 cloves garlic finely chopped

1 red onion

METHOD

Combine all ingredients (except eggs) to a even consistency. Add eggs a combine.

Lay out the flap with skin facing down and rub the mix in to the meat.

Tightly roll and hold together with string

Place in oven with lid on at 160 degrees for approx 45 mins to 1 hour. Turn up heat to 210 degrees for 15 minutes.

Allow to rest for 20 minutes before slicing.
